Back in his Jura, Julien Gauthier says he is tired, because the days were busy during this national pancake competition contested in Joué-lès-Tours. He also admits to having been a little disappointed, at the time, with his ranking (4e tied out of 20 participants). But this Wednesday, December 6, when returning to this meeting, he only keeps the positive side of this beautiful experience. “During these two days, a good atmosphere reigned with the true values of craftsmanship. We had a lot of exchanges between us. For example, I made friends with a baker from the North who will pass on to me the recipes for his specialties. I am happy with my pancakes and happy to have represented Jura and Franche-Comté. »

Julien Gauthier also explains that the criteria imposed by the jury have been tightened this year, compared to last year. “For example, one of the criteria was the minimum loss to be made, on the dough, the gilding, the syrup, etc. Last year, the standard not to exceed was 1 kg, this year they increased to 700 g. And since we were all less than 700 g, they added a constraint that was not planned. The fewer losses we made, the better we were rated. »
Another rule had changed: the time went from eight hours to make two pancakes to six hours this year.
If he missed the podium, the Jura native nevertheless has another reason for satisfaction: the M6 channel spotted him. Journalists came to film him in his bakery on Friday 1er December and followed him during the two days of the national competition. The report will be broadcast on the show 66 Minutes early January.
Today, Julien Gauthier does not know if he will repeat the experience of a national competition. “It’s too early to tell. And with the end of year holidays, we have a big period of work ahead of us. »
