For many, the end-of-year holidays are an opportunity to take a well-deserved vacation, but for others, it is on the contrary the peak of activity of the year. This is the case for artisan bakers and pastry chefs, who help to garnish our Christmas tables.

In Dole, with around twenty bakeries and pastry shops, each neighborhood has its own. At Bedugue, there are two: Marie’s Gourmet Break And the Kadé bakery. The boss of the latter, Koffi Kadé, is on deck: “We plan to sell 1,500 Christmas logs this year”. So, the 9 employees and interns are busy, especially since the big work period will be concentrated on the few days before Christmas “This year, customers are more forward-looking and place orders a little earlier, but the bulk orders will be placed over the three days just before Christmas. People think first about what they are going to eat as a main course at Christmas, they think about dessert at the last moment. »

Special bread orders

The peak of activity is not limited to pastry making, for Koffi Kadé. “We also have a lot more orders for bread, especially special breads because with the holidays it’s an opportunity to have something out of the ordinary on the table. »

To meet demand, the Kadé bakery will be exceptionally open on Monday December 25 until 3 p.m. And on Sunday December 24, the vast majority of Doloise bakeries will be open, as B&W in the city center or L & In avenue Jouhaux.

After the logs, the galette des Rois

After Christmas, it’s not yet vacation time for artisans: the logs will give way to the traditional Galette des Rois. Koffi Kadé regrets that this dessert initially consumed for the feast of the Epiphany, that is to say the second Sunday after Christmas, is sold earlier and earlier: “Now, in large retailers they even sell it from of September, it’s a shame the tradition is getting lost a little. Here we only start selling galettes des Rois from January 1st.”
